To get the most out of your premium KOM charcoal, proper storage is just as important as cooking itself.
Moisture is Enemy Number One
Charcoal is highly porous and absorbs moisture from the air. Damp charcoal is hard to light, smokes excessively (with bad, white smoke), and cannot reach high temperatures.
Where to Store Them
Never leave bags of KOM charcoal outside in the rain or on damp ground. Store them in a dry garage, basement, or closet. It is best to keep them elevated off the floor on a pallet or shelf.
Storage Containers
The best way to store KOM charcoal is in airtight plastic containers (like large trash cans with tight lids). This stops humid air from getting in.
What to do with Damp Charcoal
If your KOM charcoal does get damp, don't throw it away. Spread it out in the sun for a few hours on a hot, dry day to dry naturally.
Quality KOM charcoal from beech, oak and hornbeam is produced perfectly dry. Store them properly and they will always provide fast lighting and clean, powerful heat.
