Room Temperature - Why It's Important Before Cooking
Understand why meat should reach room temperature before cooking on KOM charcoal.

One of the most commonly skipped details in BBQ cooking is meat temperature before cooking. Cold meat straight from refrigerator doesn't cook evenly on KOM charcoal.
Why Room Temperature Matters
When meat is cold inside, the outside cooks much faster than inside. Result is overcooked crust and raw interior.
How Long to Wait
Thin pieces (steaks, chicken breasts) - 30-45 minutes. Medium pieces (chicken thighs) - 45-60 minutes. Large pieces (roast beef, whole chicken) - 1-2 hours.
Safety
Don't leave meat at room temperature for more than 2 hours. Bacteria multiply quickly at temperatures between 5°C and 60°C.
